| 1 | Coat a medium nonstick skillet with cooking spray. |
| 2 | Place skillet over medium high heat until hot.add apples and raisins; saute 1 minute. |

| 4 | combine 3 cups milk, ?c sugar, and rice in a large saucepan; bring to boil. |
| 5 | Cover, reduce heat, and simmer 15 minutes. |
| 6 | Combine cornstarch and remaining 2 tsps. of milk, stirring well; add to the rice mixture. |
| 7 | Bring to boil, and cook 1 minute, stirring occasionally. |

| 9 | gradually stir in about žth of the hot rice mixture into the egg; add to remaining hot mixture, stirring constantly. |

| 11 | pour rice mixture into a 1 quart baking dish coated with cooking spray. |
| 12 | Combine remaining 1 t sugar and cinnamon; sprinkle over rice mixture. |
| 13 | Place baking dish in a large shallow pan; add hot water to pan to a depth of 1 inch. |
| 14 | Bake at 325f for 1 hour and 15 minutes. |
| 15 | Remove dish from water; let cool 30 minutes before serving. |
