| lbs | Miniature Mexican tomatoes | | | -- washed & deseeded | | 12
| each | Shallots, chopped | | 1/3
| cup | Water | | 1/3
| cup | Cucumber, minced | | 1
| tsp | Salt | | 1/4
| tsp | Black pepper | | 1/3
| cup | Corn flour |

Procedures:
| 1 | Place tomatoes in a large saucepan, add the shallots & water & simmer for 30 minutes, stirring gently on occasion. | | 2 | Add the cucumbers & salt & pepper, simmer for 10 minutes, stirring, until the tomatoes break up. | | 3 | Quickly add the corn flour, 1 tablespoon at a time, stirring slowly. | | 4 | Simmer for 5 minutes & serve. |
