New potatoes in white wine

Ingredients:
1 1/2 lbsSmall white new potatoes
- or small Finnish potatoes
2 cupDry white wine
1/2 cupWhite vinegar
1 tbspUnsalted butter
1 tspFinely minced garlic
1/4 cupFinely minced shallots
1 tspSalt
1/2 tspFreshly ground black pepper
1/4 cupChopped parsley
1 tbspChopped fresh tarragon -OR-
- 1 teaspoon dried
Procedures:
1Rinse unpeeled potatoes under cold water and place in 2-quart pan.
2Add wine, vinegar, butter, garlic, shallots, salt and pepper.
3(if using dried tarragon, add to wine and vinegar mixture).
4Cover.
5Bring to boil over high heat.
6Reduce heat to low and simmer until potatoes are tender, about 15 minutes.
7Using slotted spoon, remove potatoes to serving platter and keep warm in oven at 200 degrees.
8Cook wine-vinegar mixture over high heat, reducing by 1/Add parsley and fresh tarragon.
9Remove potatoes from oven and pour sauce over top.
10Makes 4 servings.
