Mushroom risotto

Ingredients:
2 tbspOil
8 Spring Onions, Sliced
8 ozLong Grain Rice
1 1/2 pintVegetable Stock
12 ozMushrooms, Sliced
1 Red Pepper, chopped and
-deseeded
8 ozCourgettes, Sliced
Salt and Pepper
Procedures:
1Heat oil in a frying pan.
2Cook onions until soft.
3stir in rice until grains are coated with oil.
4Pour in 1 ?pints of stock and bring to the boil.
5stir in mushrooms, pepper and courgettes.
6Lower heat, cover and simmer for 15 minutes until rice has absorbed stock, adding remaining stock as necessary.
7season to taste.
8Serve hot or cold
