| pint | Vegetable Stock | | 12
| oz | Mushrooms, Sliced | | 1
| | Red Pepper, chopped and | | | -deseeded | | 8
| oz | Courgettes, Sliced | | | Salt and Pepper |

Procedures:
| 1 | Heat oil in a frying pan. | | 2 | Cook onions until soft. | | 3 | stir in rice until grains are coated with oil. | | 4 | Pour in 1 ?pints of stock and bring to the boil. | | 5 | stir in mushrooms, pepper and courgettes. | | 6 | Lower heat, cover and simmer for 15 minutes until rice has absorbed stock, adding remaining stock as necessary. | | 7 | season to taste. | | 8 | Serve hot or cold |
