Mother's spinach

Ingredients:
2 lbsSpinach
1 tspSalt
1/4 cupOlive oil
1/4 tspSugar
2 Garlic cloves, minced
2 tbspLemon juice
Procedures:
1Wash spinach carefully to remove sand.
2Cook with salt not more than 5 minutes and only with water that clings to the leaves.
3Chop spinach coarsely.
4Heat oil in skillet and add the spinach, sugar and garlic.
5Reduce heat to simmer and slowly stir greens to coat well with the oil.
6Sprinkle with lemon juice and mix thoroughly.
7Cover and cook 15 minutes.
8Serve hot.
9Note: if desired, add 3 t. freshly grated parmesan cheese the last 5 minutes and stir continually until cheese is distributed well through the spinach
