Ingredients:
10 ozFrozen spinach, thawed
2 tbspVegetable oil or water
1 smallOnion, finely chopped
2 tbsp"chicken-flavored" powder

1 -Vegetable bouillon cube
1 3/4 cupBoiling water
2 cupTVP granules
1 lbsSoft tofu
1 cupGluten flour, -OR-...
3/4 cup-Whole wheat flour
1 tbspNutritional yeast flakes
1 1/2 tspSalt
1 tspGarlic powder
1 tspPoultry seasoning
1/2 tspOnion powder
3 tbspVegetable oil
CHICKENLESS GRAVY
2 cupBoiling water
2 tbspVegetable oil
3 tbspNutritional yeast
1 Vegetable bouillon cube
1/2 cupDiced fresh mushrooms
1/2 cupFinely chopped onion
Onion salt, to taste
Unbleached all-purpose flour
Procedures:
1Steam the spinach and drain well.
2Heat the oil or water in a medium frying pan over medium heat.
3Cook the onion, stirring occasionally, until transparent, about 5 minutes.
4Dissolve the imitation chicken-flavored powder or bouillon powder in the boiling water.
5Add the tvp and let stand for about 10 minutes.
6Preheat the oven to 350 °F.
7Pat the tofu dry, then mash.
8In a large bowl, combine the tvp mixture, spinach and tofu.
9Stir in the remaining ingredients and pour the mixture into a lightly greased 8-?x 4-?inch loaf pan.
10Smooth the top and bake for 45 minutes, or until brown on top.
11If the loaf begins to get too brown on top, cover with aluminum foil.
12Make the gravy.
13In a large suacpan, simmer all the ingredients except the flour for approximately 5 minutes.
14Slowly add the flour (tablespoon by tablespoon), whisking after each addition, until desired thickness is reached.
15Keep warm.
16Let loaf stand for 10 mintues, then run a knife around the edges and turn out onto a platter.
17Serve with gravy.
