Ingredients:
1 Boneless single loin roast
- (3 pounds)
1 tbspSugar
2 tbspCornstarch
3/4 cupPineapple juice
3/4 cupOrange juice
1 dashSalt
1 dashGround cloves
2 tbspLemon juice
1 pintFresh strawberries
-- hulled and sliced
Procedures:
1Place roast in a shallow roasting pan.
2Bake at 350 °F.
3For 60-90 minutes, until meat thermometer inserted registers 155-160 °F.
4Remove roast from oven, let stand 10 minutes before slicing.
5Meanwhile, combine sugar and cornstarch in medium saucepan.
6Stir in pineapple and orange juices and cook, stirring, over medium heat, until mixture bubbles and thickens.
7Remove form heat and stir in salt, cloves and lemon juice.
8Serve roast with sauce, and garnish with strawberries.
9Preparation time: 15 minutes.
10Cooking time: 75 minutes.
