Ingredients:
16 ozCan black beans
3 tspOlive oil
1 smallOnion -- chopped
2 Cloves garlic -- crushed
1/2 smallJalapeno -- chopped
1 tspSalt
1 pinchBlack pepper
1 tspSugar
1 pinchOregano
1 Bay leaf
2 1/2 cupWater
1 cupRice
1 tspVinegar
1 tspWhite wine
Procedures:
1Heat 2 teaspoons olive oil in heavy pot, saute onion, garlic, and green pepper until tender.
2Add salt, pepper, sugar, oregano, bay leaf, black beans, and water.
3Bring to boil.
4Add rice.
5Turn heat to low, simmer ?hour.
6Add vinegar and wine.
7When ready to serve, stir in 1 teaspoon olive oil.
8Serves 3 to 4.
