Ingredients:
3/4 lbsSmoked sausage
1/3 cupAlad oil
1/3 cupFlour
4 Stalks celery, chopped fine
3 clGarlic, minced
2 medOnions, diced
2 largeCarrots, chopped fine
2 quartChicken broth
1 3/4 cupLentils
1 tbspWorcestershire
1/4 tspPepper
1/4 tspCayenne
Procedures:
1In a 5 to 7 quart pan, over medium heat, cook sausage, stirring, until brow.
2Spoon from pan; reserve.
3Add oi to drippings in pan to make 1/3 cup fat.
4Add flour; stir until mixture is red brown, abouth 10 minutes.
5Add celery, garlic, onion and crrots; cook, stirring until vegetables begint o soften, about 3 minutes.
6Add reserved sauseage, chicken broth lentils, worcestershire, pepper and cayenne.
7Bring to boiling over high ehat; redue to simmer, cover and cook until lentils ar soft when pressed, about 40 minutes.
