Marinated mushrooms - buon'appetito

Ingredients:
1/2 cupOlive oil
1/4 cupRed wine vinegar
3 tbspLemon juice
1 cupWater
2 Garlic cloves, chopped
1 tspThyme, dried
1 Bay leaf
1 tbspTomato paste
1 tspPeppercorns
1 tspCoriander seeds (optl)
1 lbsMushrooms, small, button
1 tbspBrandy
Salt to taste
GARNISH
2 tbspParsley, chopped or
Chives
Procedures:
1Mushrooms keep refrigerated for up to 2 weeks.
2Combine all ingredients except mushrooms, brandy and salt in a large pot.
3Bring to a boil and simmer for 5 minutes.
4Wipe mushrooms clean.
5If they are large, cut in halves or quarters.
6Add to simmering liquid.
7Cook together for 15 minutes or until mushrooms are tender.
8Remove mushrooms with slotted spoon the boil remaining liquid down about 5-10 minutes or until ?cup remains.
9Stir in brandy and season with salt.
10Strain over mushrooms and leave overnight.
11Garnish with parsley or chives before serving.
