Ingredients:
1 pack(10 oz.) frozen lima beans
1 tbspAll-purpose flour
1/2 tspSalt
1/2 cup(2 oz.) shredded reduced-fat
2 tbspReduced-calorie ketchup
-drained
1 tbspReduced-calorie margarine
1 cupSkim milk
1/8 tspPepper
-Cheddar cheese
2 (4 oz.) jars diced pimento
Vegetable cooking spray
Procedures:
1Cook beans according to package directions, ommitting salt and fat.
2Drain and set aside.
3Melt margarine in a medium saucepan over low heat; add flour, stirring until smooth.
4Cook, stirring constantly, 1 minute.
5Gradually add milk; cook over medium heat, stirring constantly, until thickened and bubbly.
6Stir in salt and pepper.
7Remove from heat.
8Add beans, cheese, ketchup and pimento to sauce; stir well.
9Spoon into a 1 ?quart casserole coated with cooking spray.
10Bake at 375 °F for 30 minutes or until thoroughly heated.
