Ingredients:
2 1/2 lbsSmall red potatoes, *
1/4 cupOlive oil
2 tbspLemon juice, fresh
1 tspSalt
1 tspFresh oregano, OR
1/2 tspDried oregano
1 tspFresh thyme, OR
1/2 tspDried thyme
1/4 tspPaprika
1/2 tspPepper, finely ground
Procedures:
1* or white rose potatoes, unpeeled Preheat the oven to 425°F.
2Wash the potatoes, rinse, and pat dry.
3Cut each into ?inch dice.
4Combine the olive oil, lemon juice, salt, oregano, theyme, paprika, and pepper in a large bowl and mix well.
