Lentil rice pilaf

Ingredients:
1 tbspOlive oil
1 largeClove garlic, finely chopped
1/2 cupChopped shallots
2 tspCurry powder
3/4 cupUncooked brown rice
1/2 cupUncooked lentils
2 cupWater
1/2 tspSalt
6 Walnut halves, chopped
1/4 cupChopped chives
Pepper to taste
4 cupSteamed vegetables, such as
Broccoli, carrot sticks
Green beans and sliced leeks
Procedures:
1In large heavy saucepan heat olive oil and saute garlic and shallots.
2Do not allow to brown.
3Stir in curry powder and saute 2 minutes.
4Add rice and lentils.
5Saute 3 minutes.
6Add water and salt.
7Bring to boil.
8Cover and reduce heat.
9Simmer over low heat 40 minutes.
10Remove from heat and let sit 15 minutes without removing lid.
11Stir in walnuts and chives.
12Season to taste with pepper.
13Place lentil rice pilaf in middle of heated serving platter and arrange vegetables around it.
14variation: use the lentil rice pilaf as a filling to stuff vegetables, such as green peppers, small winter squash, large zucchini etc.
15Precook vegetables before stuffing, then bake at 350 °F.
16Until heated through.
