Kenyan-style collard greens with lemon

Ingredients:
2 lbsCollard greens
2 tbspCanola oil
1/2 cupFinely chopped onion
1 Jalapeno pepper, seeded and
Minced
2 medPlum tomatoes, peeled
Seeded and chopped
1/4 tspSalt
Freshly ground black pepper
1 tbspLemon juice
Procedures:
1Wash the collard greens in several changes of water.
2Remove the stems.
3Stack the greens a few at a time and cut crosswise into ?inch wide strips.
4Bring a large pot of water to the boil, add the collard greens and cook 10 minutes.
5Drain and rinse with cold water.
6Squeeze out the excess moisture.
7Heat the oil in a large skillet.
8Add the onion and jalapeno; saute 5 minutes.
9Add the tomatoes and cook 1 minute.
10Stir in the greens, salt and pepper.
11Cook 5 minutes.
12Stir in the lemon juice and cook 1 minute.
13Serve.
