Ingredients:
2 tbspVIRGIN OLIVE OIL
1 lbsCARROTS
1/4 tspTHYME, DRIED
3/4 tspSALT
1 1/2 lbsZUCCHINI
Procedures:
1With a knife or mandoline, cut carrots and zucchini into 2 ? x ? square julienne strips.
2Heat oil in a skillet, over high heat, add carrots and cook, stirring, for 2 minutes.
3Add zucchini, thyme, and salt.
4Cook, stirring for 5 minutes or until the vegetables are tender.
5Makes about 5 ?cups.
6Each one cup serving = 65 calories, 4 g fat, 229 mg sodium, 0 chol.
7Prep time = 30 minutes, cooking time = 7 to 10 minutes.
