Ingredients:

CAKE
2 cupSugar
1 Small can crushed pineapple
1 1/2 cupCrisco oil
1 tspVanilla
2 cupCarrots, grate, pack
1 tspCinnamon
2 tspBaking powder
1 tspSalt
2 tspBaking soda
2 cupAll-purpose flour
4 Eggs
CREAM CHEESE FROSTING
1 lbs10x powdered sugar
1 cupPecans, chopped
8 ozCream cheese
1 cupFlaked coconut
1/2 Stick margarine
2 tspLemon juice
Procedures:
1For cake: blend sugar and oil.
2Beat well.
3Add eggs one at a time.
4Sift flour and other dry ingredients at least twice.
5Add flour to oil/egg mixture.
6Add remaining cake ingredients.
7Pour batter into 3 greased and floured cake pans (line with waxed paper).
8Bake at 325 °F for 30-40 minutes.
9For icing: cream margarine and cream cheese.
10Add sugar, lemon juice and nuts, and coconut.
11Frost between layers, tops and sides.
12I made more of these cakes when i was catering than i could ever count.
