Ingredients:
1/2 cupLow-sodium soy sauce
1/2 cupPeanut butter
2 tbspToasted sesame oil
2 tbspCurry powder
3 cupBok choy, chopped
2 packFrozen leaf spinach, thawed
-and drained (8 oz each)
2 cupSnow pea pods
6 Carrots, sliced into ?

2 largeRed onions, thinly sliced
8 ozFirm tofu, cut into 1" cubes
2 Green bell peppers, cut into

2 Red bell peppers, cut into

Procedures:
1Preheat oven to 275 deg.
2in a small saucepan, heat soy sauce, peanut butter, sesame oil and curry over medium heat, stirring until well blended.
3Add enough hot water to make a thin sauce, if necessary.
4combine sauce with remaining ingredients in a large roasting pan or casserole dish.
5Place in oven and cook, covered, for 2 hours.
6Serve hot.
