Ingredients:
2 cupBlack-eyed peas -- cooked
3 cupLong-grain rice -- cooked
1/2 cupRed onion -- chopped
1/4 cupCelery -- chopped
1 Jalapeno pepper -- seeded
And minced
1/4 cupFresh chervil or parsley --
Loosely packed
1/4 cupFresh mint -- loosely
Packed
1 Clove garlic
1/2 tspSalt
3 tbspLemon juice -- freshly
Squeezed
1/4 cupOlive oil
1/4 tspBlack pepper -- freshly
Ground
Procedures:
1Combine peas, rice and next three ingredients in a large bowl.
2place herbs and garlic on a cutting board, and sprinkle evenly with salt.
3Finely chop herbs and garlic.
4Sprinkle herbs over rice mixture and stir gently.
5combine lemon juice, oil and pepper.
6Stir into rice mixture.
7Makes 6 cups.
