Honey roast carrots

Ingredients:
2 1/4 lbsSmall carrots, peeled
4 tbspOlive oil
1 ozButter
3 tbspClear honey
Salt & pepper
Parsley to garnish
Procedures:
1Preheat oven to 200"c (400°F).
2Cut the carrots in half lengthways.
3Place the olive oil and butter in a large roasting tin, put in oven for 5-6 mins to heat up.
4Remove from oven and add the carrots, coating them in the hot fat.
5Roast for 40 mins.
6Drizzle the honey over the carrots, season, stir and roast for a further 15 mins.
7Or until the carrots are lightly browned at the edges.
8Serve at once, garnished with fresh parsley.
