Ingredients:
| 2 1/4
| lbs | Small carrots, peeled | | 4
| tbsp | Olive oil | | 1
| oz | Butter | | 3
| tbsp | Clear honey | | | Salt & pepper | | | Parsley to garnish |

Procedures:
| 1 | Preheat oven to 200"c (400°F). | | 2 | Cut the carrots in half lengthways. | | 3 | Place the olive oil and butter in a large roasting tin, put in oven for 5-6 mins to heat up. | | 4 | Remove from oven and add the carrots, coating them in the hot fat. | | 5 | Roast for 40 mins. | | 6 | Drizzle the honey over the carrots, season, stir and roast for a further 15 mins. | | 7 | Or until the carrots are lightly browned at the edges. | | 8 | Serve at once, garnished with fresh parsley. |
