Ingredients:
14 lbsUncooked smoked ham
1 cupBrown sugar
1/2 cupDry sherry
1/4 cupHoney
1/4 cupDijon mustard
Procedures:
1Preheat oven to 300 degrees.
2Put ham, fatty-side up, in a foil-lined metal baking pan.
3Cover with foil and bake for 3 hours.
4Combine remaining ingredients.
5Remove ham from oven.
6Carefully trim away all but 1/8-inch of fat.
7Score with a sharp knife in a diamond pattern, making cuts 1/8-inch deep and one inch apart.
8Pour excess fat from pan.
9Line pan with new foil, and put ham in pan.
10Spoon glaze over ham and bake for 20 minutes.
11Raise oven temperature to 325 degrees, and glaze again.
12Bake an additional 20 minutes.
13Glaze once more and bake 15 minutes.
14Cool before carving into thin slivers
