Ingredients:
1 lbsGreen beans
-Green and Yellow Wax Beans
- about an 1-? wide
2 tbspVirgin olive oil
2 largeRipe tomatoes, peeled
1 tbspChopped dill or basil
Water, -=OR=-
-=OR=- a mixture of
8 Boiling onions
1 largeGarlic clove, thinly sliced
Salt
- seeded and chopped
1 tbspChopped parsley
Juice from the Tomatoes
Procedures:
1Choose beans that are bright green and firm.
2The smaller ones will be less fibrous.
3Top and tail them, then cut into pieces about 1 ?inches long and wash well.
4Peel the onions and slice them in thin rounds.
5Warm the olive oil, add the onion, garlic, and cook over a gentle heat for several minutes until the onions begin to soften.
6Salt lightly, then add the beans and cover them with the chopped tomatoes and herbs.
7Add several table- spoons tomato juice or water, cover the pan tightly and cook over medium heat until the beans are tender, about 15 minutes.
