Grated potato pancakes - latkes

Ingredients:
6 medRaw potatoes
1 smallOnion
2 Eggs, slightly beaten
3 tbspFlour
1 dashPepper
1 tspSalt
1/2 tspBaking powder
Procedures:
1Pare and grate raw potatoes and onion.
2Let stand 10 minutes so that liquid will rise to top.
3Remove liquid.
4Stir in eggs.
5Add other ingredients and blend together.
6Drop by spoonfuls into a hot well greased skillet.
7Brown on both sides over moderate heat.
8Drain on absorbent paper.
9Serve hot with applesauce, sugar, or sour cream.
10Variations: potato cakes with meat: add ?cup dried, cooked meat or cracklings.
11Substitute bread or cracker crumbs for flour.
12Fry same as above.
13Potato cupcakes: bake potato pancake mixture in well greased custard cups in moderate oven (350°F) until brown, about 40 minutes.
14Serve hot.
15Potato pie (kugel): prepare potato pancake mixture and bake in a shallow greased casserole in a moderate oven (350°F) until brown, about 40 minutes.
16Serve hot.
