Ingredients:
2 tbspVEGETABLE OIL
1 xMEDIUM ONION
1 tspGROUND GINGER
1 tspGARLIC POWDER
2 tbspFLOUR
2 xMEDIUM TOMATOES
10 xWHOLE PEPPERCORNS
6 xCLOVES, WHOLE
1 xCINNAMON STICK
2 1/2 lbsCHICKEN, SKIN, FAT REMOVED
2 cupWATER
1 tbspWORCESTERSHIRE SAUCE
3/4 lbsBABY CARROTS, FRESH OR FROZEN
6 ozGREEN PEAS
8 ozRED OR WHITE NEW POTATOES
Procedures:
1In a deep skillet or dutch oven, heat oil over medium heat.
2Saute onions, ginger and garlic until soft and tender.
3Add flour and cook 1 minute, stirring quickly to prevent sticking.
4Stir in tomatoes and allow to cook another 2 minutes.
5Wrap peppercorns, cloves and cinnamon in a small piece of cheese cloth.
6Add chicken, cheese cloth bag, water and worcestershire sauce to onion mixture.
7Reduce heat and simmer for 20 minutes, with pan covered.
8Add carrots, peas and potatoes.
9Continue to simmer, covered for 20 to 25 minutes more, until chicken and vegetables are cooked through.
10Remove the cheese cloth bag and serve hot.
