Roasted red and green pepper dip

Ingredients:
1 Red Bell Pepper
1 1/2 cupMayonnaise
1 tspDried Parsley, Crushed
1 Green Bell Pepper
1/2 cupSour Cream
GARNISHES
Fresh Parsley, Chopped, OR
Paprika
Dried Parsley, Crushed
2 tbspLemon Juice
1 tbspFresh Parsley, Chopped, OR
Procedures:
1Slice the peppers in half, vertically, and remove the seeds.
2Char under the broiler on both sides (about 5 minutes per side).
3Remove and cool.
4Peel and dice the peppers and set aside.
5Blend the mayonnaise and sour cream until smooth.
6Mix in the lemon juice and parsley then blend in the peppers.
7Cover and chill.
8Garnish with additional parsley and sprinkle with paprika, if desired.
9Makes about 3 cups of dip.
10Suggested dippers: deli meats, elephant garlic chips, baby corn, string beans, carrots, bread sticks source unknown
