Ingredients:
1 cupWhole wheat flour
1/3 cupButtermilk
2 tbspAll-purpose flour
1/4 cupDark molasses
2 tbspPacked brown sugar
1/4 cupVegetable oil
1 tspFennel or anise seed
1 eachBeaten
1 tspBaking powder
1/4 cupRaisins
1/2 tspBaking soda
Procedures:
1Microwave: in large bowl, combine flours, brown sugar, fennel seed, baking powder and bakin soda.
2In small bowl, combine buttermilk, molasses, oil and egg until blended.
3Stir into flour mixture just until mositened.
4Fold in raisins.
5Line 6 microwavable muffin-cups with double paper>>>>>>>>>>>liners.
6Spoon batter into each cut, filling ?full.
7Micro at high (100%) 2 ?to 4 ?minutes or until wooden oppick inserted in center comes out clean.
8Rotate dish ?turn halfway through cooking.
9Let stand 5 minutes.
10Remove from pan.
11Repeat procedure with remaining batter.
