Ingredients:
1/2 cupOil
2 Chicken breasts
1 tbspSherry
1 tbspLight soy sauce
1 tbspCorn starch
1 can(8-oz.) bamboo shoots, diced
2 tbspHoison sauce
1/2 tspCrushed red-hot pepper
1 tbspChopped scallion
1 tspChopped ginger
Procedures:
1Bone chicken and cube it.
2Mix sherry, soy sauce and corn starch.
3Marinate chicken in cornstarch mixture for 15 minutes.
4Heat oil.
5Add chicken cornstarch mixture and stir-fry for 2 minutes.
6Remove chicken.
7Add bamboo shoots, hoison sauce, scallion, ginger and crushed red peppers.
8Stir well, then add chicken and serve
