Ingredients:
1 Loin roast venison
1/2 lbsSalt pork, cut into strips
1 smallOnion, chopped
1 clGarlic, minced
1 tbspFresh parsley, chopped
1/2 Bay leaf, crushed
1/2 tspCelery seeds
1/2 tspDry thyme
-pepper, to taste
4 Whole cloves
1 tspBeef bouillon
Procedures:
1Fold 2 large sheets of aluminum foil together with a double fold.
2There should be enough to enclose the roast.
3Place roast on foil.
4Lard with pork strips.
5Stick cloves into loin and sprinkle other ingredients over top.
6Enclose roast tightly in foil and cook in 300 degree oven for approximately 45 minutes per pound.
