| 1 | Combine rice and water in a medium saucepan. |
| 2 | Bring to a boil. |
| 3 | Reduce heat, cover and simmer 25 min, or until rice is very tender and most of the water is absorbed. |
| 4 | Combine sugar, cornstarch and salt. |
| 5 | Add milk along with sugar mixture to rice. |
| 6 | Add raisin if desired at this point as well. |
| 7 | Heat to boiling, boil 1 minute, stirring constantly. |
| 8 | Remove from the heat. |
| 9 | Stir in butter and vanilla. |
| 10 | Slowly stir about 1 cup of the hot rice mixture into the beaten egg yolks or eggbeaters in a bowl. |
| 11 | Blend with remaining mixture in saucepan. |
| 12 | Cook over medium heat stirring frequently, just until mixture starts to bubble. |
| 13 | Remove from heat immediately. |
| 14 | Pour into a serving dish. |
| 15 | Serve plain (no chance) or with cinnamon,nutmeg, whipped cream, etc. |
