Uncle ben's classic rice pudding

Ingredients:
1/3 cupUncle Ben's Converted brand
Rice
1 1/2 cupWater
1/3 cupSugar
1 tspCornstarch
1/4 tspSalt
1 1/3 cupMilk
1 tbspButter or margarine
1/2 tspVanilla extract
2 Egg yolks beaten OR
1/2 cupEggbeaters
Cinnamon, nutmeg, raisins
(optional)
Procedures:
1Combine rice and water in a medium saucepan.
2Bring to a boil.
3Reduce heat, cover and simmer 25 min, or until rice is very tender and most of the water is absorbed.
4Combine sugar, cornstarch and salt.
5Add milk along with sugar mixture to rice.
6Add raisin if desired at this point as well.
7Heat to boiling, boil 1 minute, stirring constantly.
8Remove from the heat.
9Stir in butter and vanilla.
10Slowly stir about 1 cup of the hot rice mixture into the beaten egg yolks or eggbeaters in a bowl.
11Blend with remaining mixture in saucepan.
12Cook over medium heat stirring frequently, just until mixture starts to bubble.
13Remove from heat immediately.
14Pour into a serving dish.
15Serve plain (no chance) or with cinnamon,nutmeg, whipped cream, etc.
16*serves (5) ohhhhhh sure!! 3 is more like it if you truly love creamy rice pudding
