Ingredients:
| | -JUDI M. PHELPS | | 1/2
| cup | Long grain rice | | 1
| large | Egg | | 1/2
| cup | Sugar | | | Ds Salt | | 1
| tsp | Vanilla extract | | 1/2
| tsp | Nutmeg | | 1
| small | Can evaporated milk | | | Regular milk | | | Cinnamon |

Procedures:
| 1 | Place rice in saucepan, add salt. | | 2 | Cover with water; cook covered on low for 20 minutes; stirring occasionally. | | 3 | Test rice to be sure it is done, then set aside. | | 4 | Do not drain rice. | | 5 | in a casserole, place egg, sugar, vanilla and nutmeg. | | 6 | Beat all together. | | 7 | Place small can of the evaporated milk in a cup, add the regular milk to make one cup total. | | 8 | Then add 1-?cups additional milk to the casserole. | | 9 | Add rice last. | | 10 | Stir all slightly. | | 11 | Sprinkle top with cinnamon. | | 12 | Bake in 325 °F. | | 13 | Oven 40 minutes. | | 14 | Mixture will look somewhat loose, but will harden as it cools. | | 15 | Serve |
