Quick meal--pasta susanna

Ingredients:
1 eachCooked pasta (I like
Rotini)
1 eachChopped vegetables (i.e.
Mushrooms, Bell Peppers
Broccoli, Zucchini/Summer
Squash)
1 eachSpinach
1 eachOnions
1 eachGarlic
1 eachVeggie broth
1 canDiced tomatoes and broth
Procedures:
1In large non-stick skillet, saute onions & mushrooms & garlic.
2After a while, add spinach if frozen.
3Wait until spinach thaws, then add your other veggies.
4You may want to add some veggie broth.
5Before they"re quite done, add 1 can (more if you like tomatoes, or if you"re feeding lots (3 or more) people) of diced tomatoes with their sauce.
6Stir until tomatoes start to warm up, then add the cooked pasta.
7Stir all together.
8Spice as desired.
9(basil, oregano, and dill is good).
10Don"t forget freshly ground pepper.
11This is quick, although it does use two pans.
12It really impressed my roommate the first time i made it.
13I like it because i can use lots of veggies, and it isn"t terribly tomatoey.
14It"s so much lighter than pouring regular tomato sauce on your pasta.
