Ingredients:
4 Chicken leg quarters
1/2 tspSalt
1/2 tspBlack pepper
2 tbspMelted butter
1/2 cupRaspberry jam --
(red/seedless)
2 tbspBalsamic vinegar
1 tbspSoy sauce
1/8 tspCrushed red pepper
Procedures:
1Preheat the oven to 375 degrees.
2Place the chicken leg quarters in a large baking pan that has been coated with nonstick vegetable spray; sprinkle the chicken with the salt and black pepper, then drizzle with the melted butter.
3Bake for 45-50 minutes, or until the chicken is golden and cooked through.
4In a small saucepan, combine the remaining ingredients to make a raspberry sauce; mix well.
5Cook over low heat for about 1 minute, until the sauce is smooth, stirring occasionally.
6Remove the chicken from the pan and place on a serving platter.
7Top with the sauce and serve
