Ingredients:
2 lbsChicken breasts without skin
Nonstick cooking spray
14 1/4 ozTomatoes, canned, cut up
1/4 cupDry red wine
1 tspSugar
1 tspDried basil, crushed
1 Cl Garlic, minced
1 Bay leaf
1 tbspWater
2 tspCornstarch
4 ozCooked spaghetti
1/4 cupPimiento-stuffed olives, sli
Procedures:
1Recipe by: new dieter"s cookbook preparation time: 1:00 rinse chicken; pat dry.
2Spray a 10-inch skillet with nonstick cooking spray.
3Preheat over medium heat.
4Add chicken and brown for 10 to 15 minut turning to brown evenly.
5To the skillet, add undrained tomatoes, wine, sug basil, garlic, and bay leaf.
6Bring to boiling; reduce heat.
7Cover and sim about 35 minutes or till chicken is tender.
8Transfer chicken to another di keep warm.
9In a small bowl stir together water and cornstarch.
10Stir into tomato mixture in skillet.
11Cook and stir till thickened and bubbly.
12Cook stir for 2 minutes more.
13Serve chicken and sauce over cooked spaghetti.
14Garnish with olives, i desired.
