Ingredients:
1/4 cupOIL
2 tbspDRY SHERRY
1 tspGINGER
1 tspSOY SAUCE
1 tspGARLIC POWDER
1/4 tspDRY MUSTARD
1/4 tspCHILI POWDER
1/4 tspPEPPER
1/4 tspOREGANO
1/4 tspSAGE
1/4 tspTHYME LEAVES, DRIED
1/4 tspGROUND CLOVES
1/4 tspGROUND CINNAMON
1/4 tspSALT
1/4 tspSUGAR
1/4 tspALL-PURPOSE FLOUR
1 lbsCHICKEN BREASTS, CUTUP
3 tbspONION, CHOPPED FINELY
2 eachMEDIUM TOMATOES, DICED
1 eachGREEN PEPPER, DICED
Procedures:
1In a small bowl, stir together 2 tbsp. oil, sherry, and all the spices.
2Set aside.
3Place the stir fry pan over high heat and add 1 tablespoon of oil.
4Stir fry onion and peppers until soft.
5Remove vegetables from pan.
6Add remaining oil, add chicken and stir-fry until no longer pink.
7Cut to test, about 3 minutes.
8When chicken is done add spice mixture and tomato and stir constantly until mixture boils and thickens, about 1 minute.
9Add vegetables back into pan and stir fry for 1 or 2 minutes or until vegetables are heated through.
10Makes two servings.
