Ingredients:
4 Servings
2 tbspAll-purpose flour
1/8 tspSalt
4 Chicken breasts, boned and
-halved
1/4 cup(?stick) butter
6 largeMushrooms, sliced
1 cupDiced onion
1/4 cupMaple syrup
Freshly cooked rice
Procedures:
1Preheat oven to 350°F.
2Combine flour and salt in shallow dish.
3Dredge chicken in flour, shaking off excess.
4Melt butter in heavy large skillet over medium-low heat.
5Add mushrooms and saute until tender, about 4 minutes.
6Remove with slotted spoon; keep warm.
7Increase heat to medium-high.
8Add chicken and onion and cook until chicken is browned and onion is tender, turning chicken once, about 4 minutes per side.
9Transfer to 1 ?quart baking dish.
10Top with mushrooms.
11Pour maple syrup evenly over mushrooms.
12Bake until heated through, about 30 minutes.
13Serve immediately over rice.
