Ingredients:
1 eachCHICKEN BREAST WHOLE ***
1 tbspFLOUR
1/4 tspSALT
1/4 tspPEPPER
2 tspOLIVE OIL
1/3 cupCHICKEN BROTH
2 tbspLEMON JUICE
1 tbspCAPERS, DRAINED, OPTIONAL
1 tbspCHOPPED PARSLEY
Procedures:
1*** skin and de-bone chicken breasts, split chicken breast in half.
2Coat chicken with a mixture of flour, salt and pepper.
3Heat oil in skillet over medium high heat.
4Add chicken and cook for 6 to 8 minutes, turning once, until lightly browned and no longer pink in center when tested with a knife, remove to serving plater or dinner plates.
5Add lemon juice to skillet.
6Stir over medium high heat for 2 to 3 minutes, scraping up any browned bits from bottom.
7Cook until sauce is reduced slightly.
8Stir in capers and parsley.
9Pour over chicken.
10Makes 2 servings.
