Kottopoula me pilafi (chicken w/pilaf)

Ingredients:
3 lbsChicken parts
1/2 cupButter or other shortening
1 eachMed. onion, chopped
1 1/2 lbsTomatoes, peeled, strained OR
1 tbspTomato paste + 1 c. water
Water as needed
3 cupRaw rice (or less)
2 1/3 cupWater for each cup of rice
Procedures:
1Wash & wipe chicken.
2Brown butter in lge.
3Pot; add chicken.
4Brown on all sides.
5Add onion and let it brown.
6Add tomatoes (or diluted paste) and the 1 cup of water.
7Cook abt.
820 min. add 2 1/3 c. water for each cup of rice you will use and continue to cook until chicken is tender (abt.
920 to 30 min)..
10Remove the chicken parts with a slotted spoon and keep them hot.
11Add rice to the sauce in the pot, stirring in the beginning to keep it from sticking.
12Simmer, covered, until rice is tender and has absorbed most of the sauce (abt.
1320 min)..
14Remove from the heat.
15Place chicken on rice, cover the pot with a clean towel, put the lid back over the towel.
16Let stand for 10 min., then serve.
