Ingredients:
3 lbsChicken, cut up
2 packItalian salad dressing mix - 1 ?pt Oil, for deep frying
3 tbspFlour
2 tspSalt
1/4 cupLemon juice, or vinegar
2 tbspMargarine, for deep frying
2 cupMilk, or beer
Pancake mix
Procedures:

2* good seasons italian or mild italian salad dressing mix preferred.
3mix salad dressing mix, flour, salt, lemon juice and margarine to make a paste.
4Spread paste evenly over chicken.
5Stack in a bowl, cover and refrigerate at least two hours or, better yet, over night.
6about one hour before serving, heat about 1 ?pints of oil in a heavy 9 i saucepan to 425 degrees.
7Oil should be about three inches deep.
8pour milk, club soda or beer in a deep, narrow bowl.
9Dip each piece of chicken in the liquid, then dust with pancake flour.
10Do not overcoat.
11Let pieces dry a few minutes without touching each other.
12Fry a few pieces at a time until coating is crisp.
13Drain and place on a cookie sheet one inch apart.
14Bake, uncovered, at 350 °F for 30 minutes.
