| 2 | * good seasons italian or mild italian salad dressing mix preferred. |
| 3 | mix salad dressing mix, flour, salt, lemon juice and margarine to make a paste. |
| 4 | Spread paste evenly over chicken. |
| 5 | Stack in a bowl, cover and refrigerate at least two hours or, better yet, over night. |
| 6 | about one hour before serving, heat about 1 ?pints of oil in a heavy 9 i saucepan to 425 degrees. |
| 7 | Oil should be about three inches deep. |
| 8 | pour milk, club soda or beer in a deep, narrow bowl. |
| 9 | Dip each piece of chicken in the liquid, then dust with pancake flour. |
| 10 | Do not overcoat. |
| 11 | Let pieces dry a few minutes without touching each other. |
| 12 | Fry a few pieces at a time until coating is crisp. |
| 13 | Drain and place on a cookie sheet one inch apart. |
| 14 | Bake, uncovered, at 350 °F for 30 minutes. |
