Ingredients:
4 sliceBacon
2 tbspGreen onion, sliced
1/2 cupCelery, chopped
1/2 cupCarrots, thinly sliced
2 cupMashed potatoes
1 canCream-syle corn
1/2 cupEnglish peas, frozen
2 cupMilk
1/2 tspSalt
1 cupCheddar cheese, shredded
1 largeTomato, peeled and sliced
Procedures:
1Recipe by: country living recipes; oxmoor house 1982°Fry bacon in a large saucepan until crisp; drain on paper towels.
2Crumble bacon.
3Reserve 1 tablespoon drippings in pan.
4Saute onion, celery, and carrot in reserved drippings for 2 minutes.
5Stir in portatoes, corn, peas, milk, salt, and cheese.
6Cook over medium heat, stirring occasionally, until cheese melts.
7Top each serving with a tomato slice, bacon, and a dash of seasoned pepper.
