Ingredients:
3 cupFinely chopped onions
3 cupDiced celery
6 tbspOlive oil
3 tbspMinced garlic
3 cupDiced zucchini
6 cupChicken broth, low salt
4 1/2 quartPasta shells
4 1/2 quartDiced tomatoes
6 tbspDried basil
2 1/2 tspSalt
1 1/2 tspBlack pepper
1/2 cupGrated parmesan cheese
Procedures:
1Recipe by: california tomato commission (july 1996) http://www.tomato preparation time: 0:30 saute9 onions and celery in oil in a stockpot over medium high hear for 5 minutes, or until tender.
2Stir in garlic, zucchini and corn; saute9 2 minutes.
3Add chicken stock, bring to a boil and add remaining ingredients except parmesan.
4Cook until pasta is tender, about 10 minutes.
5To serve: spoon 1-?cups soup into each bowl.
6Top each with 1 tsp. parmesan cheese.
