French potato-mint soup

Ingredients:
1 tbspButter or margarine
1 1/3 lbs(4 medium) potatoes
-- cut into ?inch cubes
2 canVegetable or chicken broth
--(14 ?ounces each)
1 1/2 cupWater
1 cupSliced carrots
1 1/2 cupFrozen peas
1/2 cupSliced green onions
1/2 cupMint leaves
-- (coarsely chopped)
Salt, to taste

Procedures:
1In 3-quart saucepan over medium-high heat, melt butter.
2Add potatoes; cook, tossing occasionally, 5 minutes.
3Reduce heat to medium and add broth, water and carrots.
4Bring to boil, reduce heat, cover and cook until potatoes and carrots are tender, about 15 minutes.
5Add peas, onions and mint.
6Continue to cook 5 minutes.
7Season with salt and lemon juice.
