Ingredients:

| small | Onions, minced | | | 1 ea Garlic cloves, crushed | | | 6 ea Peppercorns, black, crushed | | 1
| tbsp | Flour, all-purpose | | 1/4
| cup | Rice, uncooked |

Procedures:
| 1 | Do not wash the hare parts overly, try to leave some blood. | | 2 | Put all the parts except the liver in a pot with 3 quarts water, and bring to a boil. | | 3 | Skim well. | | 4 | Peel vegetables except onion and dice. | | 5 | Add to pot with caraway seeds and 1 tablespoon salt. | | 6 | Keep heat very low and let soup simmer. | | 7 | Melt lard, add minced onion, crushed garlic and the hare liver, diced. | | 8 | Sprinkle with black pepper. | | 9 | Brown onion and liver fast, then dust with flour. | | 10 | Stir well and cook for a few minutes more. | | 11 | Add a ladle of broth from the soup pot. | | 12 | Stir well and pour into the soup pot. | | 13 | Put rice into the soup pot and cook till it is done. | | 14 | Adjust salt. | | 15 | Variation: add 3 tablespoons lemon juice, or whip lemon juice with sour cream at last minute |
