Ingredients:
1 lbsDried black beans
Enough water to cover beans
6 cupWater
1 lbsBoneless ham
-- cut into ?inch cubes
1 lbsBoneless pork loin
-- cut into ?inch cubes
3/4 lbsHot Italian sausage
-- sliced into 1-inch pieces
3/4 lbsSmoked sausage
-- sliced into 1-inch pieces
1 pintCherry tomatoes, stemmed
1 Onion, peeled and chopped
1 tspRed pepper flakes
6 Garlic cloves
-- peeled and minced
1/8 tspOrange zest
Procedures:
1Cover the beans with water and soak overnight; or cover them with boiling water and let stand two hours.
2Drain.
3Preheat oven to 350 °F.
4In a large dutch oven, combine beans, the 6 cups of water, and remaining ingredients.
5Bring to a boil, skimming if necessary.
6Cover and transfer to oven.
7Bake 1-?hours; remove cover and bake another 30 minutes, stirring occasionally.
8Serve immediately, with cornbread, if desired.
9Or allow to cool slightly, then cover and refrigerate overnight.
10Remove any fat from surface.
11Reheat feijoada slowly.
12Preparation time: 15 minutes.
