Ingredients:
4 cupChicken stock
1 Escarole, cleaned, tough
-stems removed -- coarsel=
Y chopped
8 clGarlic, peeled, finely
-chopped
2 cupWhite beans, cooked
Salt & fresh ground pepper t
-o taste
1/4 cupOlive oil
Procedures:
1Recipe by: magazine cut-out preparation time: 1:00 in a heavy pot, combine the stock, escarole, and garlic.
2Bring to a boi= l.
3Reduce heat and simmer about an hour or until the escarole is very ten= der.
4Stir in the beans and season with salt & pepper.
5Return to a simmer.= simmer 3-4 minutes.
6Just before ser ving, add a bit of olive oil for flavoring.
