Ingredients:
4 cupLow-sodium beef bouillon
1 smallCarrot, thinly sliced
1 Inner stalk of celery
Chopped
1/2 smallBay leave
1 tspDried mint
1 tbspSugar
2 cupRed wine
1 quartVery ripe strawberries
Hulled
16 Enoki mushrooms, trimmed and
Washed
Procedures:
1In a saucepan, combine first seven ingredients.
2Bring to a boil, then simmer partially covered, for 20 minutes.
3Cool and strain the stock, discarding the vegetables.
4In a food proicessor, combine strawberries and one cup of stock.
5Puree.
6Mix puree with remaining stock.
7Chill two hours.
8Float four mushroms in each bowl.
