Ingredients:
2 cupBlack beans -- soaked
4 quartWater
3 Whole cloves
1 Whole onion -- peeled
1/2 lbsLean beef -- diced
1/4 lbsSalt pork -- prepared
1/8 tspCayenne pepper
1/2 cupSherry
Salt and pepper -- to taste
Procedures:
1Directions: (prep 10-15 mins; soak 2 hrs; cook 3 hrs): ~rinse beans and sort.
2Soak for 2 hours.
3Drain.
4-rinse the salt pork.
5Cut the rind several times.
6Rinse some more.
7-in a large saucepan place the black beans and the water.
8-stick the whole cloves into the whole onion and add it to the beans.
9-add the diced beef, salt pork, and cayenne pepper.
10Bring the liquid to a boil.
11Cover the saucepan, reduce the heat to low, and simmer the ingredients for 3 hours, or until the beans are tender.
12Skim off any foam that appears.
13-add the sherry, salt, and pepper.
