Ingredients:

| lbs | Leeks, cleaned and sliced | | | -thin, including 1" of green 3 ?lb Baking potatoes, peeled and | | | -top | | 2

| cup | Chicken broth or stock | | | -cubed | | 1/2
| tbsp | Black pepper |

Procedures:
| 1 | Put the leeks, onions and broth in a pot. | | 2 | Bring to a boil. | | 3 | Reduce the heat; cover. | | 4 | Simmer for 25 minutes. | | 5 | Add the potatoes; return to a boil. | | 6 | Cover and simmer for 20 minutes, or until the potatoes are tender. | | 7 | Process in a blender until smooth. | | 8 | Stir in the pepper. | | 9 | to serve after freezing: thaw as recommended. | | 10 | Reheat slowly, covered. | | 11 | Serves 12-14. | | 12 | per 1 cup serving: 154 calories, 6 grams protein, 30.5 grams carbohydrates, 2.8 grams fiber, 1 gram fat (0 grams saturated), 510 milligrams sodium. |
