Ingredients:
Turkey carcass
2 xCarrots, sliced
4 xCelery stalks, plus...
1 cupCelery, chopped
1 Onion, quartered, plus...
1/3 cupOnion, chopped
6 xPeppercorns
2 xBeef boullion cubes
2 cupTurkey, cooked and cubed
1 canStewed tomatoes (8 oz)
1/2 cupUncooked rice
1/2 cupDry sherry
2 xBay leaves
1/2 tspBasil
1 tbspParsley, chopped
Procedures:
1Place turkey carcass in large kettle, cover with water.
2Add celery stalks, carrots, quartered onion, peppercorns and boullion cubes.
3Bring to a boil, reduce heat and simmer, covered, for 2-3 hours.
4Cool, skim off fat.
5Remove bones and skin.
6Save any meat pieces to add to soup.
7Strain stock and add water, if necessary, to make 2 quarts.
8Bring to a boil.
9Add remaining ingredients, bring to a boil, reduce heat and simmer, covered, for 1 hour.
