Ingredients:
1/2 lbsBlack turtle beans
1 1/4 tspButter or margarine
3/4 ozHam, diced in ?pieces
1/4 Onion, diced in ?pieces
1/2 cupCelery, diced
1/4 cupCarrots, diced
3/5 clGarlic, minced
1 quartWater
1 1/4 tbspChicken base
1 3/4 tspTomato paste
2/5 cupBeer
1 2/3 pinchBlack pepper, or more to
-taste
1 tbspCilantro, minced
1/3 tspChili powder
1/3 tspCumin
Procedures:

2Remove any stones, rotten beans or foreign matter.
3In a colander, rinse beans under cold running water.
4At this point, you may choose to soak beans in cold water overnight.
5If not, continue with preparation.
6In a large kettle, heat butter and sautae ham, onion, celery and carrots until onion is translucent, but not brown.
7Add garlic and cook 2 more minutes.
8Add water, chicken base, tomato paste, beer and pepper.
9Bring to a boil.
10Add cleaned beans and reduce heat to low.
11Simmer about 2 to 3 hours or until beans are tender.
12Beans must be tender and stock thick.
13Skim aby scum that rises to the surface.
14Add cilantro, chili powder and cumin.
15Cook 10 more minutes.
16Garnish bowls of soup with a dollop of sour cream and a little salsa or chopped cilantro.
