Easy eggplant casserole

Ingredients:
1 smallEggplant
1/2 lbsSausage, bulk
1 smallOnion, chopped
1 Egg, well beaten
1/2 cupBreadcrumbs, dry
1 tspButter (or marg.), melted
1/4 cupCracker crumbs
Procedures:
1Peel eggplant, and cut into 1" cubes; cook in a small amount of boiling wate 10 minutes or until tender.
2Drain.
3Let cool slightly.
4Cook sausage and onion until onion is tender and sausage is brown.
5Combine eggplant, sausage mixture, egg, and breadcrumbs.
6Mix well, and spoon into a greased 1-quart casserole.
7Combine butter and cracker crumbs; sprinkle over casserole.
8Bake at 350 °F for 25 minutes.
