Ingredients:
2 lbsBlack beans
1/2 cupSunflower oil
1/2 lbsBacon
1/2 lbsDiced ham
8 Chopped onions
7 clGarlic, minced
7 Stalks chopped celery
W/leaves
3 cupUncooked brown rice
1/2 tspCayenne
1 tbspVegtable season salt
4 tspGround cumin
1/4 cupWhite wine
1 cupSherry
6 quartChicken broth OR
3 Bouillon cubes and 6 qt of
Water
Procedures:
1Wash black beans, cover with water and allow to soak overnight; rinse; drain; set aside.
2Pour oil into large soup pot.
3Add bacon, ham, onion, garlic and celery.
4Cook at high simmmer until vegetables are soft, about 30 minutes.
5Add beans, rice, seasonings, and broth to soup pot.
6Bring to boil; reduce heat, cover and simmer 2 ?3 hours.
7Let soup cool; put through a blender a little at a time until smooth.return to soup pot; reheat on low about 45 minutes, adding wine andsherry.
8Ladle into bowls.
